Spring into Health: The Top Must Try Spring Salad Recipes

The Trend-Setter:  Colorful Spring Mix

Yield: 4 Servings

6 cups spring mix (any will do)
2 Apples, Chopped
½ Cup Dried Cranberries
½ Cup Sliced Almonds
½ Cup Goat Cheese, crumbled

1 tbsp Dijon mustard
1 tbsp Organic Honey
¼ cup Organic Lemon Juice
¼ cup Grated Lemon Zest
½ cup organic, extra-virgin Olive Oil
Salt and Pepper to Taste

  1. In a large bowl, combine the spring mix, apples, dried cranberries, almonds, and goat cheese.
  2. In a small bowl, whisk together the mustard, honey, and lemon juice.
  3. Slowly stir in the lemon zest and olive oil.
  4. Season the dressing to taste.
  5. Before serving, drizzle the vinaigrette over the salad and enjoy!

The Classic: Strawberry and Spinach Salad with Honey Balsamic Vinaigrette

Yield: 4 Servings

6 cups of fresh spinach
1 cup sliced strawberries
½ Cup Gorgonzola Cheese, crumbled
½ Cup Pecans
¼ cup Balsamic Vinegar
2 tbsp honey
½ cup olive oil
Salt and ground black pepper to taste

  1. In a large bowl, combine the spinach strawberries, cheese, and pecans.
  2. In a small bowl, stir the balsamic vinegar and honey together.
  3. Once the balsamic and honey are combined, slowly mix the olive oil into the bowl.
  4. Season the vinaigrette with salt and pepper to taste.
  5. Before serving, drizzle the vinaigrette over the salad and enjoy!

The Foodie: Roasted Chicken Spring Salad

Yield: 4 Servings

4 Chicken Breasts, skin on
Olive Oil
Salt and Pepper

6 cups spring mix, your choice
1 handful parsley
½ cup organic bell peppers, (choose red, yellow, or orange for added color)
½ cup snap peas
1 avocado, sliced or copped

2 tsp honey
2 tbsp garlic
1 clove garlic
1 tsp minced ginger
  1. Preheat oven to 375 degrees.
  2. Glaze your chicken with olive oil and add salt and pepper for flavor.
  3. Roast chicken until cooked.
  4. In a large bowl, combine spring mix, parsley, bell peppers, radishes, snap peas, and avocado.
  5. In a small bowl, whisk the vinegar, honey, garlic, and ginger. Stir in the shallots. Slowly stir in the olive oil.
  6. Drizzle the salad with the vinaigrette.
  7. Top salad with the chicken and enjoy!
